Apple Pancake | Valleyview Alberta Photographer

I received a few comments regarding the apple pancake featured in my Thankful Thursday post found here.  The story behind the pancake is that I don’t actually make it myself.  Someone else makes it for me…  and that probably makes it taste even better 🙂

On Saturday, I was asked to make it and while making it, I photographed the process.  Here’s the recipe (deciphered from two scraps of paper!), just in case you’d like to enjoy some apple pancake too!

Apple Pancake

Ingredients

2 cups of apples (I used 4 apples which is probably a bit better than 3 cups and it was a perfect amount of apple topping… in my opnion)

1/2 cup of juice (you can use almost any kind of juice you like, but I like it best with apple juice)

3 Tbsp. of butter

4 eggs

2/3 cup of milk

2/3 cup of flour

1/2 tsp. of salt

1/4 tsp. of nutmeg

1/2 cup of nuts (I used walnuts but you can use whatever you like)

1 Tbsp. of sugar

1/2 to 1 tsp. of cornstarch

lemon juice

Cinnamon

Cloves

Preheat oven to 425

1.  Peel, core, and slice apples.  Put apples in a medium sized saucepan.  Add 1/2 cup of juice.  Heat over medium-low heat.

2.  Melt butter by putting it in a cast iron skillet (10″ skillet — this is what you will use to bake the pancake in) and placing it in the oven.

3.  In a large bowl, beat eggs.  Add milk, flour, salt, and nutmeg.  Mix well.

4.  Remove skillet from the oven.  Add the melted butter from the skillet to the bowl.  Next, add the nuts and sugar to the bowl.  Mix together.

5.  Pour batter into skillet and place in oven.  Bake for 15-20 minutes or until pancake is golden in colour.

6.  Just before the pancake is finished, add cinnamon and cloves to the apples cooking in the saucepan.  Add lemon juice to the apples.  Add enough cornstarch to thicken the apples (tip:  I used a tea strainer to add the cornstarch to help eliminate/reduce lumps in the apple topping).  Cook mixture until it bubbles and then remove it from the heat.

7.  When the pancake is finished (it should have “poofed-up” a bit during baking), remove it from the oven and pour the apples on top.

8.  Cut the pancake and serve with your favourite maple syrup 🙂

Variations:  I’ve had this pancake made with other fruit too…  peaches, nectarines, berries. etc.
